Kale Pineapple Smoothie

Here is a little dose of sunshine for you this morning! I absolutely love pineapple, it always puts a smile on my face and when it is blended up in a smoothie I can almost convince myself that I am in Hawaii, they were on for a smokin deal at the grocery store so I went for it.

Ingredients:

2C Kale
1 Pineapple
1/2 large Avocado (or a whole smaller one)
2TBSP Hemp Hearts
Water
Coconut Milk (optional, can use other type of milk if desired)

Instructions:

Cube pineapple, into small enough pieces that your blender can handle them. Tear Kale into smallish pieces and  roll between your hands to break down the thick fibrous leaf. Add the avocado, hemp hearts and water to about an inch below the line and blend until smooth! I am currently avoiding dairy but this is a good one to add yogurt to, so you can sub it for some of the water, or what I do is just blend it without, then add some yogurt to my son’s sippy cup, then the smoothie and shake it up, and then stir in some coconut milk to mine to make it extra creamy. I hope you love it and it adds a splash of sunshine to your day!

    1. I add avocado to lots of smoothies! It makes them so creamy and also filling enough to actually replace a meal ;)
